Chocolate Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour (maida)
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Frosting:

  • 1 cup unsalted butter, at room temperature
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar (icing sugar)
  • 1/3 cup heavy cream (whipping cream)
  • 2 tsp vanilla extract
  • Pinch of salt

Instructions:

1. Preheat the oven to 350°F (180°C). Grease and flour two 9-inch round cake pans. Set aside.

2. In a large mixing bowl, whisk together all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt until well combined. Set aside.

3. In another mixing bowl, beat buttermilk, vegetable oil, large eggs, and vanilla extract until smooth. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

4. Pour boiling water into the batter and mix until well combined. The batter will be thin, but that's okay. Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven and let it cool in the pans for 10 minutes before transferring it to a wire rack to cool completely.

5. To make the frosting, beat unsalted butter in a large mixing bowl until light and fluffy. Add unsweetened cocoa powder and beat until well combined. Add powdered sugar (icing sugar), heavy cream (whipping cream), vanilla extract, and a pinch of salt to the bowl. Beat until smooth and creamy. If the frosting is too thick, add more heavy cream (whipping cream) one tablespoon at a time until you reach your desired consistency. If it's too thin, add more powdered sugar (icing sugar) one tablespoon at a time until you reach your desired consistency. Spread the frosting evenly over one of the cooled cake layers using a spatula or an offset spatula. Place the second cake layer on top of the frosted layer and spread more frosting over the top and sides of the cake using a spatula or an offset spatula. Decorate with chocolate shavings or sprinkles if desired. Enjoy your homemade chocolate cake!
