Prepare Tasty Yummy Mongo ice cream at Home [Recipe]


Ingredients:

  • 1 cup mongo beans (green gram), soaked overnight
  • 4 cups whole milk
  • 1 cup heavy cream
  • 1 cup sugar
  • 1 tsp cardamom powder
  • 1 tsp rose water
  • Pistachios and rose petals for garnish

Instructions:

1. Drain the soaked mongo beans and rinse them thoroughly. Set aside.


2. In a heavy-bottomed pan, add whole milk and bring it to a boil over medium heat. Reduce the heat to low and add the soaked mongo beans. Cook for 30-40 minutes or until the mongo beans are soft and mushy. Stir occasionally to prevent sticking.


3. Add heavy cream, sugar, cardamom powder, and rose water to the pan. Mix well and cook for another 10-15 minutes or until the sugar is completely dissolved. Stir occasionally to prevent burning.


4. Remove the pan from the heat and let it cool to room temperature. Strain the mixture through a fine-mesh sieve to remove any solids or impurities. Discard the solids and transfer the strained mixture to a blender or food processor. Blend until smooth and creamy.


5. Pour the blended mixture back into the pan and place it over low heat. Cook for another 10-15 minutes or until the mixture thickens slightly, stirring occasionally. Do not overcook as it may curdle.


6. Remove the pan from the heat and let it cool to room temperature. Transfer the mixture to an airtight container and refrigerate for at least 4 hours or overnight, until it sets into a smooth and creamy texture.


7. Scoop out the mongo ice cream into bowls or cones using an ice cream scoop or spoon. Garnish with chopped pistachios and rose petals before serving. Enjoy your homemade Mongo ice cream!
