Marry Me Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Chopped parsley for garnish

1. Season the chicken breasts with salt and pepper.

2. Heat olive oil and butter in a large skillet over medium-high heat.

3. Add the chicken breasts and cook until browned on both sides and cooked through. Remove from the skillet and set aside.

4. In the same skillet, add minced garlic and cook for about a minute until fragrant.

5. Pour in chicken broth and bring to a boil. Reduce heat and simmer for a couple of minutes.

6. Stir in heavy cream, sun-dried tomatoes, grated Parmesan cheese, dried basil, salt, and pepper. Cook for a few minutes until the sauce thickens.

7. Return the cooked chicken breasts to the skillet and spoon the sauce over them.

8. Simmer for another couple of minutes until the chicken is heated through.

9. Garnish with chopped parsley and serve hot with rice or pasta.
