Malai Kofta


Ingredients:

For the koftas:

  •   3 medium potatoes, boiled and mashed
  •   1/2 cup paneer (Indian cottage cheese), grated
  •   1/4 cup cashew nuts, finely chopped
  •   2 tablespoons raisins
  •   1 teaspoon ginger paste
  •   1 green chili, finely chopped
  •   2 tablespoons cornflour
  •   Salt to taste
  •   Oil for deep frying

For the gravy:

  •   2 tablespoons ghee (clarified butter)
  •   1 onion, finely chopped
  •   2 tomatoes, pureed
  •   2 teaspoons ginger-garlic paste
  •   1/2 cup cashew nut paste
  •   1/2 cup fresh cream
  •   1 teaspoon red chili powder
  •   1/2 teaspoon turmeric powder
  •   1 teaspoon garam masala
  •   1 teaspoon kasuri methi (dried fenugreek leaves)
  •   Salt to taste
  •   Chopped coriander leaves for garnish

Recipe:

1. In a mixing bowl, combine mashed potatoes, grated paneer, chopped cashew nuts, raisins, ginger paste, green chili, cornflour, and salt. Mix well.

2. Shape the mixture into small balls and deep fry them in hot oil until they turn golden brown. Set aside.

3. To prepare the gravy, heat ghee in a pan and sauté chopped onions until golden brown.

4. Add ginger-garlic paste and cook for a minute.

5. Add tomato puree, cashew nut paste, red chili powder, turmeric powder, garam masala, and salt. Cook until the oil separates.

6. Stir in fresh cream and kasuri methi. Simmer for a few minutes.

7. Place the fried koftas in the gravy and cook for a couple of minutes.

8. Garnish with chopped coriander leaves and serve hot with roti or naan.
