Tasty Spicy Chicken Soup [Home Recipe]

Chicken Soup


  • 500g chicken breast, boneless and diced
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish


1. Heat some oil in a large pot over medium heat.

2. Add diced chicken and cook until browned. Remove from the pot and set aside.

3. In the same pot, add chopped onion, carrots, celery, garlic, and ginger. Sauté for a few minutes until vegetables are slightly softened.

4. Pour in chicken broth, bay leaf, dried thyme, salt, and pepper. Bring to a boil.

5. Reduce heat, cover the pot, and let it simmer for about 20-30 minutes or until the chicken is cooked through and the vegetables are tender.

6. Remove the bay leaf and discard.

7. Blend half of the soup using an immersion blender or transfer half of the soup to a blender and blend until smooth.

8. Return the blended soup to the pot and add the cooked chicken.

9. Simmer for an additional 5-10 minutes.

10. Garnish with chopped parsley and serve hot.
